The Lion, the Witch and the Wardrobe: Plans are to keep all of the allegory from the books, to keep with the wishes of C.S. Lewis. Andrew Adamson has said that he's "making a movie which lives up to my memory of my book rather than specifically the book itself."
The sequence in which the wolves are in pursuit of the children. This is one of the scenes that isn’t, word for word, from the book. The children will basically be cornered on a large chunk of ice on the river, surrounded by wolves at which point one of them will pull out the staff Father Christmas had given to him before, puncture the ice and break free into the river, away from the predators.
Dean Wright, the movie’s visual effects supervisor expanded a little regarding this particular set: “Also, the kids come upon a frozen waterfall and that’s going to be a huge sequence for us because we’re going to use a combination of miniatures and CG ice, CG water and all that stuff and as the kids run across the ice, the idea is it gets more and more precarious for them. We’ll have ice cracking and water gushing and all sorts of craziness will be going on around while they’re trying to make their way across the waterfalls.“
They've also added a lot to the opening of the movie in London, as well as the battle at the end, which has been expanded.
The White Witch's battle sleigh is led by Polar Bears.
Prince Caspian: They have apparently gotten the entire book into the script, but have made some changes to lengthen and make the adventure larger.
What are the "Four Winds" I've heard about? - STORY SPOILER !!!
The Lion, the Witch and the Wardrobe: They had a preview screening of the film, and in the cut, they used a lot of scratch dialogue, as all of the voice recording and effects work were far from complete at the time. In this print, the children were crowned in the name of the Four Winds. This is definitely contrary to the book, and is not actually in the final cut of the film.

The Lion, the Witch and the Wardrobe: They left out a scene where the White Witch finds many animals around a table of food that Father Christmas had brought.
They also made no reference to the Deeper Magic that was written before the Deep Magic.

AA: I've really tried to make the story about a family which is disenfranchised and disempowered in World War II, that on entering Narnia, through their unity as a family become empowered at the end of the story. It's really bringing the humanity of the characters into what is effectively a symbolic story.
The first film definitely seems to match the spirit of the book, and many fans have said that this film is as close to a replica of a book that we've ever seen.
